Garlic Roasted Potatoes

Potatoes come in all shapes and sizes, and there’s really no end to how you can prepare them. One of my favorite methods is roasting because I love the rustic look that it gives the potatoes – not to mention the ease of preparation. Skip the peeling and skip the boiling. Choose the smallest potatoes you can find, and you can even skip the cutting!

Everyone I have made this for says they are the best potatoes ever. With just five ingredients, this recipe definitely screams simple and satisfying!

Ingredients

  • 28 oz bag of honey gold potatoes or any small potato your store has, rinsed and dried
  • 2 cloves garlic, finely minced (I use a garlic press)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3 tbs olive oil

Directions

Preheat oven to 400 degrees.

Line a cookie sheet or a 9 x 13 pan with parchment paper. Place potatoes on parchment paper. Add remaining ingredients to potatoes and toss with clean hands. Make sure the potatoes are completely covered in oil.

Bake for 20 minutes, and shake pan to rotate potatoes. Bake for another 20 minutes. You should easily be able to stick a fork in the potatoes, and the skins should be slightly wrinkled.
